The cake is at its best the day you bring it home. A little care keeps every later slice as buttery as the first.
The first day
Keep the cake covered at cool room temperature. The crumb stays tender, and the glaze stays glossy.
How to serve
Use a long, thin knife. Wipe the blade between slices so each plate looks like it left my kitchen.
If any remains
Wrap slices well. They keep two days on the counter, or a week in the fridge. Let a chilled slice come back to room temperature before you pour the coffee.
